Sushi Preparation

A bamboo sushi mat (makisu) is used to roll sushi tightly, while a hangiri rice bowl ensures proper temperature control for vinegared rice. Our chefs use traditional yanagiba knives for precise fish slicing.

Traditional Tools

Chopsticks for cooking and dining, suribachi mortars for grinding sesame, ceramic graters for ginger and daikon, and otoshibuta drop lids for simmering delicate ingredients.

Cooking Techniques

Tempura batter is kept ice-cold for crispness. Tonkotsu broth simmers for hours to achieve rich flavor. Yakitori is grilled over binchotan charcoal for authentic taste.
